This is a fairly simple breakfast to put together and it will make you, or your guests, feel like you are out at a fancy breakfast spot. It's tasty and wholesome!

Tip: If you can't find Apple Spice mix where you live, you can sub for a mix of cinnamon, ginger and nutmeg.

Apple Spice Waffles Recipe
Prep time: 10 min
Cooking time: 15 min Total time: 25 min
Servings: 6-7 waffles
Ingredients for the waffles:
1 cup oat flour
1 cup quick oats
2 tbs flax meal
1 tbsp apple spice mix
1/2 tsp baking soda
1/2 tsp baking powder
1/3 coconut sugar
pinch of salt
1/2 cup applesauce
1 1/4 cup soy milk
1/2 tsp vanilla
2 tbsp apple cider vinegar
Toppings (optional):
caramelized apples * 2 apple sliced in small quarters with the peel still on. Heat up a little bit of vegan butter in a pan over medium heat. Add the apples with 1/4 cup maple syrup. Cook and stir until desired consistency.
frozen blueberries - thawed in a small pot on the stove top
pumpkin seeds
cinnamon
maple syrup
cocowhip (vegan coconut whipped cream, found in the freezer sections)
How to make it:
In a small bowl, mix the flax meal with just enough water to cover it, stir and set aside. It will thicken while you prepare the other ingredients.
In a medium size bowl, add the milk and apple cider vinegar. Set aside.
Add all the dry ingredients (except the coconut sugar) to another medium size bowl. Stir to combine.
Add the vanilla, applesauce, flax/water mixture and coconut sugar to the bowl containing the milk and apple cider vinegar. Whisk to combine.
Incorporate your dry ingredients to the wet bowl while stirring well to combine.
Heat up your waffle maker. Cook the waffles. (my waffle maker can accommodate 1/2 cup of the batter at a time)
Serve with your choice of toppings.
