Ingredients:

  • 2 cups brown rice, rinsed and cooked according to package instructions (can substitute with white rice or another grain)

  • 1 block of firm tofu, cut into strips

  • Fresh greens of choice (romaine, kale, spring mix, arugula)

  • Sourdough bread to make croutons

  • Olive oil

  • Mixed dried herbs

  • Salt and pepper


Tofu Marinade:

  • 3 tbsp ketchup

  • 3 tbsp soy sauce

  • 1 tbsp sriracha

  • 1 tsp smoked paprika

  • 1 tsp onion powder

  • 2 tsp apple cider vinegar

  • 1 tbsp maple syrup

  • Pepper to taste


Dressing for the Salad (optional - you can use store bought vegan ranch or caesar):

  • 1/3 cup hemp hearts

  • 2 tbsp dijon mustard
