Black Bean Brownies Recipe

Ingredients:

  • 1 can black beans, rinsed and drained

  • 1/3 cup almond butter

  • 1/3 cup cacao powder

  • 1/2 cup almond flour (or substitute for oat flour)

  • 3/4 cup soy milk (mixed with 1 tablespoon apple cider vinegar to create sour milk)

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 3/4 cup chocolate chips

  • 1 tablespoon vanilla extract

  • 1/3 cup coconut sugar


Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a square baking pan (8x8) or line it with parchment paper for easy removal.

  2. In a food processor or blender, combine the black beans, almond butter, cacao powder, almond flour, soy milk (mixed with apple cider vinegar), baking soda, baking powder, salt, vanilla extract, and coconut sugar. Blend until smooth and well combined.

  3. Fold in the chocolate chips, reserving a handful to sprinkle on top if desired.

  4. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

  5. Sprinkle the remaining chocolate chips on top of the batter.
