This oatmeal recipe is so good I often make it multiple days in a row. The beautiful purple colour naturally comes from the blueberries!

This recipe is for one serving but you can easily double or triple the ingredients to make it for your family.
Adding a tablespoon of chia seeds not only makes this oatmeal even creamier but it ads a rich source of omega-3 fatty acids to your morning meal.

BLUEBERRY VANILLA OATMEAL RECIPE
Cooking time: 8-10 min
Total time: 12 min
Servings: 1
Oatmeal:
1/4 cup quick oats (or rolled oats)
1 cup plant milk (I used vanilla oat milk)
1/4 tsp vanilla extract
1 tbs chia seeds
1 cup frozen blueberries
1/2 cup frozen strawberries (optional)
Toppings:
granola of choice (here's my homemade granola recipe)
drizzle maple syrup
cinnamon
How to make it:
Add all the ingredients for the oatmeal to a small pot (except for the fruits). Simmer on medium-low. Stir occasionally until desired texture is obtained. Add the fruits towards the end and warm up just enough to thaw them.
Pour into a bowl and add the toppings of your choice.
Enjoy!
