Broccoli & white bean soup

This soup is a great way to sneak in a full head of broccoli in your family's meal.

Broccoli is part of the cruciferous family and shares a lot of the same health benefits. It's loaded with vitamins, minerals and bioactive compounds.

BROCCOLI & WHITE BEAN SOUP RECIPE

Prep time: 15 min

Cooking time: 20-30 min Total time: 45 min

Servings: 4-6


Ingredients:

  • 1 yellow onion - diced

  • 3-4 garlic cloves - crushed

  • 3-4 yellow potatoes - diced

  • 1 large head of broccoli (stem included) - cut in large florets

  • 6 cups of water

  • 3 bouillon cubes

  • 1 tbsp dried oregano

  • 1 tbsp Italian herbs

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 can (398 ml) white navy beans - drained and rinsed

  • 1 cup unsweetened soy milk (or any unsweetened plant milk)

  • 1/2 cup nutritional yeast

Toppings:

  • Kale chips

  • Drizzle of oat cream


How to make it:

  1. Drizzle olive oil in a large pot over medium heat. Saute the onion until tender.

  2. Add the garlic, potatoes, broccoli, the bouillon cubes and all the herbs and spices. Stir well to coat.

  3. Add the water and cover to simmer for 15-20 minutes (or until the potatoes are cooked through and you can easily poke with a fork).

  4. Turn the heat off and add in the white navy beans, soy milk and nutritional yeast.

  5. Use an immersion blender or pour the soup into a high speed blender (this is my preferred method as it gives it a smoother finish. You will need to blend it in two batches as is it a large amount).

  6. Serve in your favourite bowl and add toppings of your liking. Enjoy!
