These granola bars may not look like much but they are DELICIOUS and oh so simple to make. Give it a try, you and your family won't regret it.

I love using almond flour in baking as it gives everything a richer taste and texture.


These bars are loaded with nutrients and fibre. Eat them as a snack or get creative and crumble them on your morning bowl of plant based yogourt with fruits and seeds.

Quick Tip: Make sure to let them rest for 30 minutes after baking before cutting into them to avoid the bars from crumbling. The process of cooling down allow the bars to continue cooking outside the oven and helps them firm up.

CHEWY GRANOLA BARS RECIPE

Ingredients:

  • 1 1/2 cup quick oats

  • 1 cup almond flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 tsp ginger powder

  • 1/2 tsp nutmeg

  • 1/3 cup applesauce

  • 1/2 cup soy milk

  • 1 tsp vanilla extract

  • crack of salt

  • 1/3 cup coconut sugar

  • 1/2 dark chocolate chips (+2 tbsp for toppings)

How to make it:

  • Pre heat the oven to 350F

  • Line an 8x8 baking pan with parchment paper

  • Combine all the dry ingredients (except chocolate chips) in a medium size bowl

  • Add in the wet ingredients. Stir well to combine then add in the 1/3 cup of chocolate chips.

  • Pour the mixture into your baking pan pressing it down gently. Top with the extra 2 tbsp of chocolate chips

  • Bake for 22-26min or until golden brown on the edges

  • IMPORTANT: cool down on the counter for 30minutes before cutting into bars or squares.
