Chickpea Minestrone Soup Recipe

Servings: 4-6


Ingredients:

  • 2 cups penne pasta

  • 1 yellow or white onion, diced

  • 3 garlic cloves, pressed

  • 3 carrots, diced

  • 3 celery stalks, diced

  • 1 bunch of Swiss chard, kale, or spinach, chopped

  • 1 can chickpeas, drained and rinsed

  • 1 can diced tomatoes

  • 8 cups water

  • 2 vegetable bouillon cubes

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp dried Italian herbs

  • 1 tsp dried oregano

  • 1/2 tsp dried basil

  • Salt and pepper, to taste


Instructions:

  1. In a large pot, heat some olive oil over medium heat. Add the diced onion and sauté until translucent and aromatic.

  2. Add the garlic powder, onion powder, dried Italian herbs, dried oregano, and dried basil to the pot. Stir to evenly distribute the seasonings.

  3. Add the pressed garlic, diced carrots, and diced celery to the pot. Sauté for a few minutes until the vegetables begin to soften.

  4. Add the drained and rinsed chickpeas, diced tomatoes, and vegetable bouillon cubes to the pot. Stir to combine.
