CRUNCHY GRANOLA RECIPE

Prep time: 10 min

Cook time: 40 min

Yields: Large mason jar


Dry Ingredients:

  • 3 cups rolled oats

  • 3 tbs chia seeds

  • 1/2 cup pecans - chopped

  • 1/2 cup walnuts - chopped

  • 1/3 cup sunflower seeds

  • 1/3 cup pumpkin seeds

  • 1/2 cup dried blueberries

  • 1 cup dried cranberries

  • 1 tsp cinnamon

  • Salt

Wet Ingredients:

  • 1/3 cup vegan butter (NOT melted)

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

How to make it:

  1. Preheat Oven: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.

  2. Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chia seeds, chopped pecans, chopped walnuts, sunflower seeds, pumpkin seeds, dried blueberries, dried cranberries, cinnamon, and a pinch of salt. Mix well to ensure all ingredients are evenly distributed.

  3. Combine Wet and Dry Ingredients: Pour the wet ingredients over the dry ingredients in the mixing bowl. You will need to use your hands to work in the butter.

  4. Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly in a thin layer.

  5. Bake: Place the baking sheet in the preheated oven and bake for 35-40 minutes, stirring halfway through, until the granola is golden brown and crispy.

  6. Cool: Once baked, remove the baking sheet from the oven and allow the granola to cool completely. It will continue to crisp up as it cools.

  7. Serve or Store: Once cooled, transfer the granola to an airtight container or jar for storage. Enjoy your vegan superfood granola with plant-based milk, yogurt, or as a crunchy topping for smoothie bowls and desserts.
