Healing Ginger Garlic Soup Recipe

Ingredients:

  • 1 cup white rice (basmati or jasmine)

  • 1 leek, sliced

  • 1 head of broccoli, florets

  • 1 large bok choy, chopped

  • 4-6 cups fresh spinach or 2 cups frozen spinach

  • 6 garlic cloves, pressed

  • 1 block firm tofu, cubed

  • 2 mushroom bouillon cubes (or vegetable bouillon cubes)

  • 1 tsp garlic powder

  • 2 tsp ginger powder (or fresh ginger, grated)

  • 2 tsp dried thyme

  • 1/4 cup soy sauce

  • 1 tsp sriracha (optional)

  • 1 tbsp maple syrup

  • 1 tsp sesame oil

  • 8 cups water

  • Olive oil for cooking


Instructions:

  1. Cook the rice according to the package instructions. Set aside.

  2. In a large pot, heat some olive oil over medium heat. Add the sliced leek and tofu. Sauté until the leek is softened, about 3-4 minutes.

  3. Add the pressed garlic cloves to the pot and cook for another minute until fragrant. Stir in the broccoli florets.

  4. Add the mushroom bouillon cubes (crushed), garlic powder, ginger powder, dried thyme, soy sauce, sriracha (if using), maple syrup, and sesame oil. Mix well to coat the vegetables and tofu with the seasonings.
