Mexican Rice Bowl Recipe

Servings: 4


Ingredients:

  • 2 cups brown rice (cooked in an Instant Pot for 20 minutes or substitute with white rice and cook on the stove)

  • 1 can black beans, drained and rinsed

  • 2 cups frozen corn

  • 1 orange bell pepper, diced

  • 1 red onion, diced

  • 2 garlic cloves, pressed

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp dried parsley

  • Salt and pepper to taste

  • 1 jar (or about 2 1/2 cups) of your favorite salsa

  • 1 avocado, sliced for topping

  • 1 lime, cut into wedges for topping

  • Corn chips


Instructions:

  1. If you haven't already, cook the brown rice according to package instructions. Alternatively, cook white rice on the stove until tender.

  2. In a large skillet or pot, heat some oil over medium heat. Add diced onion and bell pepper, and sauté until softened, about 5 minutes.

  3. Add pressed garlic to the skillet and cook for another minute until fragrant.

  4. Stir in the cooked brown rice, black beans, frozen corn, cumin, paprika, onion powder, garlic powder, dried parsley, salt, and pepper. Mix well until everything is evenly combined.

  5. Pour the salsa over the rice mixture and stir until everything is coated in the salsa. Allow the mixture to simmer for 5-10 minutes, stirring occasionally, until heated through.

  6. Taste and adjust seasoning if necessary.

  7. Serve the vegan Mexican rice hot, topped with sliced avocado and a squeeze of lime juice.
