Instant Pot Plant-Based Minestrone Soup:

Ingredients:

  • 1 can kidney beans, drained and rinsed

  • 1 can diced or chopped tomatoes

  • 2 cups frozen spinach

  • 2 cups fusilli pasta (or other noodles of your choice)

  • 2 large carrots, diced

  • 3-4 celery stalks, diced

  • 1 yellow or white onion, diced

  • 1/4 cup nutritional yeast

  • 7 cups water

  • 2 vegetable bouillon cubes

  • 1 tbsp dried basil

  • 1 tbsp dried oregano

  • 1 tbsp garlic powder

  • 1 tbsp dried Italian mixed herbs

  • Salt and pepper to taste


Instructions:

  1. Turn on the Instant Pot and select the "Saute" function. Add a tablespoon of olive oil to the pot.

  2. Once the oil is hot, add the diced onion, carrots, and celery. Saute for about 5 minutes, or until the vegetables start to soften.

  3. Add the dried basil, dried oregano, garlic powder, dried Italian mixed herbs, and vegetable bouillon cubes to the pot. Stir well to coat the vegetables with the spices.

  4. Pour in the diced tomatoes, water, frozen spinach, kidney beans, uncooked fusilli noodles and nutritional yeast, stirring to combine everything evenly.

  5. Cancel the "Saute" function. Close the Instant Pot lid and set the valve to the sealing position.

  6. Select the "Manual" or "Pressure Cook" setting and set the timer for 3 minutes on high pressure.

  7. Once the cooking time is complete, allow for a natural pressure release for about 5 minutes, then carefully perform a quick pressure release to release any remaining pressure.

  8. Open the lid and stir the soup well. Taste and adjust seasoning if necessary.

  9. Serve hot, garnished with fresh parsley or a sprinkle of vegan parmesan cheese, if desired.
