OATMEAL CHOCOLATE CHIP MUFFINS RECIPE

Prep time: 15 mins Cook time: 24-26 mins

Total time: 40 mins

Servings: 12 muffins


Wet ingredients:

  • 1 cup original soy milk (or sub for your favorite plant milk)

  • 2 tbs apple cider vinegar

  • 1/3 cup applesauce

  • 1 tsp vanilla extract

  • 2 tbs avocado oil


Dry ingredients:

  • 1 cup all purpose flour (I use a gluten free blend)

  • 1 cup rolled oats

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/3 cup coconut sugar

  • 3/4 cup bittersweet or dark chocolate chip

  • pinch of salt


How to make it:

  1. Pre-heat the oven at 350 F. Lightly grease a 12-cup muffin pan with cooking spray, or use muffins cups, or a silicone muffin pan.

  2. In a small bowl, combine the milk and apple cider vinegar to create your sour milk. Allow to sit for 5 minutes.

  3. In a medium bowl, combine all the dry ingredients except for the chocolate chips.

  4. Add the rest of the wet ingredients to your sour milk (vanilla, applesauce, oil). Whisk to combine.

  5. Stir the wet ingredients into the dry ingredients until well combined. Fold in the chocolate chips.

  6. Divide the batter evenly in the muffin pan. Add a few more chocolate chips on top of each muffin.

  7. Bake for 24-26 minutes or until muffins start to turn golden on top.

  8. Let rest for 10 minutes and enjoy while the chocolate is still warm inside!
