Energy balls

Quick and easy no-bake energy balls. These are sweetened with dates and are filled with fibre, protein and healthy fats. They are the perfect on the go snack or the pre workout boost that you need.

ENERGY BALLS RECIPE

Prep time: 15 min

Cooling time: 30 min Total time: 45 min

Servings: 12 balls


Ingredients:

  • 10 Medjool dates - pitted

  • 1/4 cup dark chocolate chips

  • 1 tbsp chia seeds

  • 1 tbsp sunflower seeds

  • 2 tbsp peanut butter

  • 1/4 tsp cinnamon

  • 1 tbsp shredded coconut

  • pinch of salt

  • 1 cup rice cereal

How to make it:

  1. Soak the medjool dates in boiling water for 3-5 minutes

  2. Strain the dates and add to a food processor. Pulse until clumps are formed.

  3. Add in all the other ingredients (except the rice cereal) and pulse a few times until it forms a dough consistency.

  4. Transfer to a mixing bowl. Mix in the cereal and stir well.

  5. Form the balls using your hands (wet hands help the dough from sticking too much).

  6. Place in the fridge to chill and set for at least half an hour.

* Keeps in the fridge for 4-5 days or in the freezer for up to 3 weeks.
