Red Curry Thai Soup Recipe

Prep time: 15 min

Bake time: 20 min Total time: 35 min

Servings: 4


Ingredients:

  • 1 leek, sliced

  • 1 small head broccoli, cut into florets

  • 1 bunch asparagus, cut into bite-sized pieces

  • 1 bok choy, chopped

  • 5-6 leaves collard greens, chopped (or kale or spinach)

  • 3 garlic cloves, pressed

  • 1/2 teaspoon garlic powder

  • 1 tablespoon curry powder

  • 1 teaspoon onion powder

  • 1 vegetable bouillon cube

  • 3 tablespoons soy sauce

  • 1 teaspoon red curry paste

  • Juice of one lime

  • 1 can (398 ml) light coconut milk

  • 225g brown rice vermicelli

  • 8 cups water

  • 3-4 scallions (green onions), thinly sliced (optional topping)


Instructions:

  1. In a large pot, heat some oil over medium heat. Add the sliced leek and sauté for 2-3 minutes until softened.

  2. Add the garlic and cook for another minute until fragrant.

  3. Stir in the curry powder, garlic powder, and onion powder, and cook for 1-2 minutes to toast the spices.

  4. Add the broccoli florets and asparagus to the pot. Stir to combine with the spices and cook for 2-3 minutes until the vegetables start to soften then Add the soy sauce, red curry paste, and lime juice. Stir well to combine.

  5. Dissolve the vegetable bouillon cube in 8 cups of water and pour it into the pot.

  6. Bring the soup to a boil, then reduce the heat and let it simmer for about 10-15 minutes until the vegetables are tender.

  7. Once the vegetables are cooked, stir in the light coconut milk, vermicelli, bok choy and collard greens and let the soup simmer for another 2-3 minutes until the noodles are cooked.

  8. Taste the soup and adjust the seasoning, adding more soy sauce or lime juice if desired.

  9. Ladle the hot soup in your favourite bowl. Top with sliced scallions if using.
