Spicy peanut stir fry

This delicious spicy peanut sauce could easily be used for rice and tofu dishes as well. It's a quick week night recipe that will only take a few minutes to whip up but will taste pretty fancy!

The sauce combines some staple ingredients that together create a depth of flavours. The chickpeas are a nice addition for texture and added proteins.


You will taste the sweet, the spicy and the creamy with this delicious peanut sauce.

SPICY PEANUT STIR FRY RECIPE

Servings: 4-5


Ingredients: Sauce

  • 1/2 cup peanut butter

  • 2 tbs red wine vinegar

  • 1/4 cup soy sauce

  • 2 tbs maple syrup

  • 1 1/2 tbs sriracha

  • 1 tsp ginger powder

  • 2 garlic cloves

  • 3 tbs water

Stir fry:

  • 1 red onion - sliced

  • 4-5 small bok choy - chopped

  • 1 small head of broccoli

  • 1 can of chickpeas - drained and rinsed

  • 200 g. shiitake mushrooms - sliced

  • 260 g. udon noodles (you could sub for rice or vermicelli)

Toppings:

  • 3-4 stems green onions - sliced

  • 1 lime - in quarters

  • sesame seeds - to taste

How to make it:

Sauce:

  1. Add all the ingredients for the sauce to a small blender (nutri-bullet style) and blend until smooth. Set aside.

Stir fry:

  1. Cook your noodles or rice or choice according to their packaging's instructions.

  2. Using the appropriate cookware, steam your broccoli for a few minutes. Add the bok choy for another couple minutes and remove from the steam basket when slightly tender (do not over cook the veggies, we want a little crunch!)

  3. Add a drizzle of oil to a pan on medium heat.

  4. Sauté the red onions for a couple minutes or until soft. Add in the mushrooms. Cook until desired consistency.

  5. In that same pan, add in the cooked pasta, the steamed veggies, the chickpeas and the sauce. Stir well to coat everything.

  6. Serve and add the toppings (optional).

  7. Enjoy!
