Split pea and lentil soup (INSTANT POT)

Prep time: 20 min

Cooking time: 8 min at high pressure in the instant pot

Servings: 4-6


Ingredients:

  • 4 celery stalks, diced

  • 5 carrots, diced

  • 1 medium yellow onion, finely chopped

  • 3 cups frozen spinach

  • 2 garlic cloves, minced

  • 1 can (398ml) diced tomatoes

  • 1/2 cup dried green lentils, rinsed

  • 1/2 cup dried split peas, rinsed

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp cumin

  • 1/4 tsp paprika

  • 1/2 tsp mixed Italian herbs

  • Salt and pepper, to taste

  • 2 vegetable bouillon cubes

  • 7 cups of water

  • 2 tbsp soy sauce

  • 1 tbsp Dijon mustard


How to make it: Preparation:

  • Rinse the dried lentils and split peas under cold water until the water runs clear. Set aside.

  • Dice the celery stalks, carrots, and onion. Mince the garlic cloves.

  1. Instant Pot Saute:

  • Set your Instant Pot to the sauté function. Heat a tablespoon of olive oil or vegetable oil in the pot.

  • Add the diced onion, celery, and carrots. Sauté for 4-5 minutes until the vegetables begin to soften.

  • Stir in the minced garlic and cook for an additional minute until fragrant.

  1. Combine Ingredients:

  • Add the rinsed lentils, split peas, soy sauce, dijon mustard, frozen spinach, diced tomatoes, garlic powder, onion powder, cumin, paprika, Italian herbs, salt, and pepper to the Instant Pot.

  • Crumble the vegetable bouillon cubes over the ingredients.

  1. Add Liquid and Seasoning:

  • Pour in the water, stirring to combine all ingredients thoroughly.

  1. Instant Pot Cooking:

  • Secure the lid on the Instant Pot and set the valve to the sealing position.

  • Cook on high pressure for 8 minutes.

  • Once the cooking time is complete, carefully quick-release the pressure.

  1. Serve and Enjoy:

  • Open the Instant Pot and give the soup a good stir. Taste and adjust seasoning if necessary.

  • Ladle the split pea and lentil soup into bowls and serve hot, with a side of sourdough or you favorite bread and crackers!
