Scrambled Tofu Breakfast

Scrambled tofu is an easy way to introduce more tofu recipes in your diet. It is a simple yet satisfying meal. I have served this meal to people who had never eaten tofu before and needless to say they loved it, they even went back for seconds!

This makes the perfect savoury breakfast but could also easily serve as lunch or dinner. Get creative with the veggies you add to your scrambled, add in some peppers for a crunch or mushrooms for a comforting taste.


Tofu is a complete plant protein. It's versatile and very easy to prepare and turn into delicious creations.

VEGAN BRUNCH | SCRAMBLED TOFU RECIPE

Prep time: 5 min

Cooking time: 7-8min Total time: Less than 15 minutes

Servings: 4


Ingredients:

  • 1 bloc (350g.) of firm tofu

  • 2-3 green onions - sliced

  • 3-4 garlic cloves - pressed

  • 1/2 tsp curry powder

  • 1/4 tsp cumin powder

  • 1/4 tsp turmeric powder

  • 1/4 tsp garlic powder

  • 2-3 big stem of green curly kale (optional)

  • salt and pepper to taste

How to make it:

  1. Remove the tofu from packaging and press it in paper towel to remove some of the excess water. Then crumble it in pieces with your finger and put aside in a bowl.

  2. Drizzle olive oil in a pan over low-medium heat. Sauté the green onions for a minute or two. Then add in the garlic. Stir for an additional minute.

  3. Add in the tofu and sprinkle all the spices over it. Stir to combine. Cook for a couple minutes.

  4. Stir in the kale and cook until tender.

  5. Voilà, that simple. You are ready to plate it with your favourite sides.

*This recipe makes for great leftovers. Get creative and turn it into burrito wraps or scrambled tofu on toast with vegan cheese.
