  • 2 cups plant milk (e.g., soy milk)

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon vanilla extract

  • 1/3 cup applesauce

  • 1/2 cup raisins

  • 1 cup pitted Medjool dates

  • 1/2 cup almond flour

  • 1/2 cup all-purpose gluten-free flour

  • 1 cup rolled oats (blended into flour)

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 2 teaspoons ground cinnamon

  • 1 teaspoon ground nutmeg

  • Pinch of salt

  • 1 cup shredded carrots

  • 1/2 cup chopped walnuts

  • 1/4 cup shredded coconut

  • 1/3 cup additional raisins

Optional Icing:

  • 1/2 cup cashews, soaked

  • 8 Medjool dates, soaked

  • 1 teaspoon vanilla extract

  2. In a mixing bowl, combine the plant milk and apple cider vinegar to create sour milk. Let it sit for a few minutes.

  3. To the sour milk mixture, add vanilla extract, applesauce, raisins, and pitted Medjool dates. Allow these ingredients to soak and mix while you prepare the dry ingredients.

  4. In a separate bowl, combine almond flour, gluten-free flour, blended rolled oats, baking soda, baking powder, ground cinnamon, ground nutmeg, and a pinch of salt.

  5. In a blender or food processor, blend the wet ingredients (sour milk mixture) until you achieve a creamy consistency.
