Veggie lentil soup

This soup is the definition of comfort in a bowl. It's loaded with all the nutrients one can need on a cold winter night. Make a big batch for you and your family or freeze the extra portions for nights where you don't want to be in the kitchen but still want a healthy, warming bowl of comfort.

I love to make a big batch of this soup so we have leftovers to heat up for days. This soup is hearty and filling.


Lentils are an incredible source of fibre, protein, folate and potassium. They may be small but they are mighty!

VEGGIE LENTIL SOUP RECIPE

Prep time: 20 min

Pressure Cooking time: 7 minutes Total time: 1h (including pressurizing time)

Servings: 6


Ingredients:

  • 1/2 cup dried green lentils

  • 1/2 cup dried split peas

  • 1 yellow onion - diced

  • 3-4 garlic cloves - crushed

  • 2 tbs tomato paste

  • 1/2 tsp turmeric powder

  • 1/2 tsp cumin powder

  • 1/2 tsp paprika powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 4 yellow potatoes - diced

  • 5-6 celery stalks - sliced

  • 3 large carrots - diced

  • 1 bay leaf

  • 7-8 cups veggies broth

  • 1 bunch green curly kale - chopped (could sub for purple kale, dino kale or swiss chard)


How to make it in the pressure cooker: * (you can follow similar steps for stove top and just let simmer until potatoes and lentils are cooked through)

  1. Start by drizzling a little oil in your pressure cooker and set to the Sauté setting.

  2. Add in the onion and stir for 1-2 minutes.

  3. Add the garlic, tomato paste and the herbs and spices. Stir well.

  4. When the herbs and spices are coating everything add in the carrot, celery and potato. Stir well for one more minute before incorporating the lentils and split peas.

  5. Cancel the Sauté setting and add in the veggie broth, the greens. Stir well once again.

  6. Add in the bay leaf and secure the lid of your pressure cooker.

  7. Set on pressure cooking for 7 minutes.

  8. When the cooking time is up you can let it fully depressurize OR you can give it 15 minutes before manually releasing the pressure.

  9. Pour in your favourite bowl and enjoy!
